We are looking to hire a commendable deputy executive chef to assist the executive chef in managing our kitchen staff and to resolve kitchen issues swiftly.
The deputy executive chef should be able:
To attract and retain staff, maintain a cooperative relationship with team members, optimize staff productivity, and serve as a replacement in team members' absence.
To assist in training staff to use new recipes, cooking techniques and equipment, and oversee cooks performing food preparation.
To oversee the organization of shifts, stocks, delivery of food supplies, prepare special dishes, and supervise overall kitchen operations, while making sure all ingredients are well prepared, in stock and well stored.
To ensure success of the team in delivering high-quality, cost-effective dishes promptly.
Top candidates are creative, service-oriented, and level-headed.
Job Responsibilities:
Ensuring promptness, freshness, and quality of dishes.
Coordinating cooks and bakers’ tasks.
Implementing hygiene policies and examining equipment for cleanliness according to FDA guideline.
Assisting in designing new recipes, planning menus, and selecting plate presentations.
Reviewing staffing levels to meet service, operational, and financial objectives.
Assisting in training kitchen staff, such as cooks, food preparation workers, and dishwashers.
Performing administrative tasks, taking stock of food and equipment supplies, and doing purchase orders.
Assisting in setting and monitoring performance standards for staff.
Obtaining feedback on food and service quality, and handling customer problems and complaints.
Liaising with Front of House for smooth flow of orders
Handling consistent stock of ingredients to make sure all ingredients are available and maintained in orderly manner
Managing Inventory of tools and equipment
Coordinating with the Manager
Job Requirements:
Ghanaian National
2+ years of reputable culinary education.
3+ years of experience in a similar position.
Advanced knowledge of food professional principles and practices.
Advanced experience in continental hot meal cooking, snack preparation and baking
High level of discipline and organization
Patient and focused personality
Seriously and ethically committed towards long-term goals
Proficient knowledge of human resources management.
Excellent knowledge of Back of house systems, ordering and inventory.
Excellent communication skills.
Ability to meet deadlines.
Available to work on-call, shifts, after hours, over weekends, and on public holidays.
