    Production Manager (Restaurant)

    Our client is seeking to hire an experienced and highly organized Production Manager to oversee food production operations at their busy establishment in Village Market.
    The ideal candidate will be responsible for production planning, staff supervision, food quality consistency, stock control, and ensuring seamless kitchen efficiency across dine-in, takeaway, and delivery operations.

    Key Responsibilities:

    • Develop daily/weekly production schedules based on sales forecasts and par levels
    • Ensure food items are prepared, portioned, and ready for service on time
    • Enforce recipe accuracy and consistent product quality
    • Coordinate production for dine-in, takeaway, and bulk orders
    • Supervise and mentor cooks, prep staff, and production assistants
    • Allocate tasks and ensure prep/closing checklists are completed
    • Provide continuous training on recipes, standards, and equipment use
    • Ensure taste, presentation, and portion standards are consistently met
    • Conduct routine tasting sessions and enforce recipe adherence
    • Maintain quality across all production shifts
    • Track daily raw material usage and reconcile with output
    • Monitor stock levels to avoid shortages and minimize wastage
    • Apply FIFO, proper storage, and accurate ordering procedures
    • Participate in stock-taking and variance reporting
    • Enforce HACCP, food safety, and sanitation guidelines
    • Conduct hygiene inspections and manage cleaning schedules
    • Report faulty equipment and support safety protocol training
    • Coordinate with procurement, FOH, and delivery teams
    • Report shortages, delays, or production challenges promptly

    Qualifications & Skills:

    • Minimum 5+ years’ experience in a kitchen supervisory or production role
    • Experience in production/centralized/catering kitchens is a strong advantage
    • Strong understanding of kitchen operations and food preparation
    • Leadership, decision-making, and organizational skills
    • Knowledge of food safety, hygiene, and compliance standards
    • Familiarity with inventory systems and production planning tools
